FROM THE PRODUCER | TThe 2017 Domaine Baud Château-Chalon Vin Jaune is a remarkable expression of Jura's iconic "yellow wine," crafted exclusively from 100% Savagnin grapes grown on the blue and grey marl soils of Château-Chalon—one of France’s most revered appellations for Vin Jaune. Aged for over six years sous voile (under a natural yeast veil) in oak barrels without topping up, this wine develops a deep golden hue and an aromatic profile rich with toasted hazelnuts, green walnuts, curry spice, preserved lemon, and subtle truffle notes. On the palate, it is dry, powerful, and complex, with vibrant acidity and a lingering finish marked by umami and saline minerality. This vintage has garnered critical acclaim, earning a silver medal at the 2024 Jura Departmental Wine Competition. Traditionally bottled in the distinctive 620ml clavelin, the 2017 Château-Chalon Vin Jaune is designed for extraordinary longevity—capable of aging gracefully for decades, even up to a century. It pairs beautifully with regional specialties like Comté cheese, foie gras, mushroom dishes, and poultry in cream sauce, and is best served at 14–16°C after being opened a few hours in advance to fully reveal its complexity.
