LOOP LINE TASTING NOTES | Domaine de Cassiopée Hautes-Côtes de Beaune Blanc Les Côtés 2023 is a fresh, mineral-driven white Burgundy made from 100% Chardonnay by the young and ambitious Domaine de Cassiopée. Coming from hillside parcels (on limestone and granite soils) above Sampigny-lès-Maranges in the sub-region Hautes-Côtes de Beaune, the wine reflects the cooler, elevated microclimate there — resulting in a profile marked by clarity, tension and finesse. The “Les Côtés” bottling is vinified with minimal intervention: fermented with native yeasts, aged partly in older barrels and bottled with little or no sulphur, to preserve terroir expression.
On the palate you can expect bright acidity, subtle mineral notes, and a lean but well-structured texture — making it an elegant white suited for seafood, shellfish, white meats or simply as a refined aperitif.
