Fermented in a combination of 300-liter oak barrels and glass demijohns, it undergoes 12–14 months of barrel aging followed by over two years of bottle maturation, resulting in a wine of remarkable depth and complexity.

On the nose, the 2019 vintage offers a bouquet of ripe citrus, wild herbs, and a subtle minerality. The palate is rich and textured, with flavors of lemon zest, fennel, and a hint of almond, all balanced by a vibrant acidity and a saline finish.
